Recipe of the Month: Jamaican Rum Bananas
Ingredients:
- 4 large bananas (a little overripe is okay)
- 1 tablespoon sugar
- Juice of one orange
- 1 tablespoon butter
- 1/2 tablespoon olive oil
- 1/2 cup rum
Instructions:
- Combine the olive oil and half of the butter in a nonstick skillet.
- Heat until water flicked into the pan sizzles.
- Cut the bananas in half length-wise and put them cut side down into the pan.
- Sprinkle the sugar over the bananas and cook the bananas until they caramelize on the bottom. Remember to do this at high heat or else the bananas will become mushy.
- Once bananas are golden brown, add the rum to the hot pan. This may flame up so be careful, but this step is essential because it deglazes the pan and get all the yummy caramel flavor off the bottom.
- After the alcohol is boiled off (school safe!), add the orange juice and the remaining butter.
